In other words, wine made from fruit other than grapes. Cider, Mead, Country and Hedgerow Wines etc. because it doesn’t require much nutrient.

EC-1118 is selected from Champagne fermentations in the Champagne Region. For this reason, it is often referred to as Champagne Yeast, but EC-1118 is actually a great all-rounder.
- High alcohol tolerance (18%)- It can be used to restart stuck fermentations.
- It ferments very fast.
- It has a wide temperature range from 10° to 30°C (50° to 86°F)
- High osmotic tolerance
- Extremely low production of foam, volatile acid and hydrogen sulfide (H2S)
- Good flocculation with compact lees
- A relatively neutral flavour and aroma contribution.
