Finca Nueva Granada uses its own clear spring water for pulping and implements shade grown techniques to protect the environment in which is relies so heavily upon. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
