Simply, the making of honey begins when bees feast on flowers, collecting the flower nectar in their mouths. This nectar mixes with special enzymes in the bees' saliva that turns it into honey. Bees carry honey back to the hive and deposit it into the cells of the hive walls.
This wonderfully rich and fragrant liquid is the world's oldest sweetener. Use it in cooking and baking; as a spread on bread; as a sweetener; or a treatment for coughs and sore throats.
Store honey in tightly covered containers in a warm dry place. Do not store in the refrigerator, since the honey will absorb moisture and become very thick. Stored properly honey can actually last several years.
Crystallization, when smooth liquid turns into crystallized solid, is a natural occurrence in honey. The main reason honey doesn't go bad is because of its simple composition. Honey is primarily sugar mixed with water. Its natural low moisture leads inherently to crystallization.. It can be remedied by placing the honey container in a bowl of hot water.
