AURICCHIO GIOVANE is still produced according to the old traditional Auricchio Provolone recipe. The brief aging period makes it soft and deliciously mild in flavor. The cheese is shaped and finished by hand. It is also used as an ingredient in numerous Recipes, including Milanese breaded provolone and grilled provolone. It can also be diced and tossed in salads. Due to its unique shape, Auricchio Giovane is also used as an original gift on special occasions and also Christmas and Easter.
