The Fermentation Weight Cup 2) stays put in place and can't shift, 3) holds the fermenting food submerged in the brine, 4) leaves very little air space in the jar, 5) deters mold, 6) prevents a messy overflow, 7) protects any airlock device from becoming contaminated by the food and juices, and is 8) easier to remove than glass weights. And who wants to take the risk of glass or ceramic chipping or breaking into the food?!
