The Bayou Classic 2.5-gallon Bayou Fryer heats from the inside out, not from the bottom. The back mounted jet burner blasts hot air horizontally through hollow inner tubing that is immersed in cooking oil. Heat transfers from the metal tubing into the center of the oil to keep batter from scorching while in use.
