BrickOvenBaker rattan bannetons are used by artisan bread makers to help shape their loaves. The banneton is heavily floured and the dough is placed into the banneton for its final proofing. In doing so, the dough does not spread out or stick. So in helping the loaf to rise upward, it creates a loaf that will be taller when it is baked.
When the bread is ready to go into the oven, you turn the dough out onto your baking surface. You do not bake the bread in the banneton. It is only for final proofing. Using a banneton in this manner is what gives many artisan loaves their characteristic spiral flour rings.

Because rattan is a natural fiber, it holds the flour that you prep it with, between its fibers and impoves the performance over time, as long as you don't wash the banneton.
To care for it, tap out loose flour and store it in a dry place. If you have sticky bits of dough you can let them try and scrape them off or use very stiff brush. If you are concerned about mold or bacterial growth, we recommend letting them sit in direct sunlight, and the UV rays of the sun usually take care of the situation.
Measures approximately 8.75 inches in diameter at the top (inner diameter), 5.5 inches in diameter at the bottom. Height is about 3.25 to 3.5 inches.

Absolutely love this Banneton!! Works wonderfully!! Before first use spray inside with water, dust with flour. Let set for 24 hours. Dust with more flour before dropping in dough....I had NO sticking!! YEAH! See pics for my 1st attempt! I baked it in a Cast Iron Dutch Oven...YUM! Super happy! I plan to buy other sizes and shapes! Would make a lovely gift for the bread baker in your life!
Well made. Perfect size and shape for loaf to bake in my earthenware baker. It is used 3 or 4 times weekly. Initially I had some sticking with higher hydration recipes. This was solved by dusting the top of the loaf with flour in addition to dusting the banneton. The sticking was occurring where the flour layer on the banneton was light or missing. If you dust both the loaf and the banneton, the chance that you miss a spot is minimized,
I read a blog on toppings for bread. One of the suggestions was Semolina. Tonight I baked a loaf using Semilina to dust the banneton and the top of the loaf. It turned out perfect.
Easy cleanup - I just brush out the inside to remove the excess flour.
This brotform makes me very happy. I love it. Before first use, mist with water and dust well with flour, then let dry to season the basket; shake out and dust again before each use. No sticking. Beautiful loaves. Perfect! I am ordering another size from BrickOvenBaker.
