Dragon's Beard Candy: Though standard carnival cotton candy and Girl’s Weave are food cousins, so to speak, cotton candy is made from only sugar and water while the latter requires butter and flour, giving it a deeper, cookie-like flavor. The hand-pulled process also gives Girl’s Weave more texture and brittleness than machine-spun cotton candy.
TURKISH COTTON CANDY STYLE: Girl’s Weave is really just similar but not identical in taste to regular cotton candy; has more depth of flavor, as opposed to straight up sugar. It’s also denser and has more chew to it, silkier and with a somewhat luxurious-gourmet edge, it differs in taste, look, and feel.
Girl’s Weave is a light threaded sugar laced with flour, butter and orange blossom essence and topped with unsalted pistachios. Made from caramel and pulled thinner than a piece of thread. It's very very similar, if not even identical, to the maybe more known "Pashmak" from Iran. Pashmak (Persian fairy floss), made from sesame, is its cousin, more available worldwide and would make a perfect substitution.
