Works like a charm. Be carefull when you're done sharpening....this can get the knife ridiclously sharp, like Jedi lightsaber sharp. The only flaw is that the suction cup mount slips around a bit.
I am amazed at the edge I can get with my edge pro. I also got the book "The Edge in the Kitchen" and with it I am learning to do compound bevels on my knives. The edge pro makes it a reasonable task to undertake even for a novice like me. It blew me away that I could take a 5 dollar 8 inch chefs knife from Chicago Cutlery I bought in Walmart to practice on and put such a fine and polished edge on it that I could slice a tomato with it without touching the tomato. Just the movement of the blade against the tomato and voila! Paper thin perfect slices.
i like it.....the build quality is above average, being a combination of half steel tubing and half injection molded plastic...it seems solid...feather light but solid .....the sharpening jig is good but you have to be ambidextrous to get a good edge on both sides of the blade, you have to be able to operate the unit equally adeptly and smoothly with both hands from both sides to get a good edge...i'm old and have always been somewhat clumsy with my right hand so we'll see if it improves with practise.........i took off one star because the holding jig won't work unless your knife is at least one inch wide; if you are wanting to sharpen your half inch boning knife it can't be done as-is, you have to make your own additional support wedges out of cardboard or wood or plastic and stick them into position with masking tape and then wing it.......a better design holding jig should be included for the price........having said that i think the actual sharpening quality is good, however...
