The stainless steel Ginsu 8" knife is very sharp, but a little heavy for my wife to handle. Time will tell if it stays as good as it is now. As long as it doesn't rust or stain badly as I've seen other reviews portray. It cuts and chops well, but you have to use a 'sawing' action as opposed to just chopping straight down like we do with the old Ginsu we still have and use.
I own several Ginsu knives some serrated some not from Kotta, Koden, Nuri and my latest Shoku series and they are all different but all represent a solid value and good performance. This serrated Kotta is an inexpensive chefs knife with a serrated edge so it requires a slight nudge while chopping but slices as a straight blade would. It will hold an edge longer than a straight blade so its perfect for those who do not sharpen their knives often although they can be sharpened just as a straight blade despite rumors that all serrated blades cannot be sharpened. Rust is the other common complaint and can easily be prevented by simply hand washing and towel drying a knife as soon as you're done using it and it only takes all of a minute to complete. Soaking in a sink or tossing into a dishwasher will ruin cutlery so that should be left for tableware and dishes. Happy cooking!
My husband had the "exact" same knife a few years ago and lost them on a move so we wanted to replace them. This most be a copy because the top of the knife cuts more than the blade! It's horrible and useless.
