Honey Pacifica's Sage honey has a crisp, delicate flavor and finishes with a hint of floral aftertaste. From the slopes of California's Sierra Nevada range, Black Sage blooms from spring through early summer. The bees love harvesting sage blossoms because on good years the nectar drips from the flowers. Sage honey is one of the few varieties that crystallize slower than other raw honeys, and most chefs prefer this type of honey as it sweetens dishes without imparting much honey flavor. This honey was gently warmed with household lightbulbs over a three-day period to ease the packing and ensuring that it never exceeds the temperature of a beehive.
