Place in a cool, dry place like a pantry and use within a month.Garlic likes cool, not cold conditions, so don't refrigerate.

• Peel the papery skin and gently pull the cloves from the head
• Place on a cutting board and press with a knife, taking care to point the blade away from you
• The clove should pop out of the skin
• Halve each clove and remove the green strand that runs down the middle
• The garlic is ready to use

Depending on size, a single clove of minced garlic equals about 1 teaspoon.

Roast a whole head or two by drizzling with olive oil and baking in a 350-degree oven for 45 minutes.

Cool and use in salad dressings, soups and sauces to add a rich flavor or as an alternative to butter on rustic bread.
