HOW TO USE AND CARE FOR YOUR ROASTER OVEN 1. Unpack your Nesco Roaster Oven completely and remove all packaging material and information labels. Place the Roaster Oven in a well ventilated area on a heat resistant surface. Set the control dial to its minimum setting. Plug the cord into a 120 volt AC outlet. Return control to maximum setting (450-degrees F). Operate the Roaster Oven empty (without the cookwell or cover) for approximately 60 minutes, or until any odor or smoking disappears. Some smoke and odor are a normal part of "curing" the element and will not reoccur in cooking use. When curing is completed, turn the temperature control to its lowest setting, unplug the unit from the electrical outlet and allow to cool. 2. Wash the cover, cookwell and rack in warm sudsy water, then rinse and dry. Refer to complete cleaning instructions in manual. 3. Non-stick cookwell: When 'curing' your Roaster Oven with a non-stick cookwell, we recommend that it be operated with cover and cookwell. Do this in a covered outside area or other well-ventilated area. After curing and cleaning, and before cooking in your non-stick cookwell for the first time, lightly coat the interior of the cookwell with vegetable oil.
HELPFUL HINTS Preheat roaster oven for 20 minutes. Roasting meat in your Nesco Roaster Oven keeps it moist and tender. For additional browning, you can add 1 tbsp. browning sauce to oil and brush over skin before roasting. To sear meat, preheat Roaster Oven at 450-degrees F. Add margarine. Cover, then sear meat for 10 to 15 minutes per side until lightly browned. Stir ground meat once. Time will vary depending on the quantity of meat. Alternative browning method for self-basting turkeys, preheat at 400-degrees F for 20 minutes. Roast bird for 1 hour at 400-degrees F. Reduce heat to 350-degrees using included time chart, 13-18 minutes per pound. During last hour of roasting increase temperature to 400-degrees and remove all excess juices in bottom of cookwell.

I use this roaster to slow-cook large chuck roasts for large batches of soup. It does this well but there are a couple of design issues with it, and a hidden cost.
Design issues: 1. The power cord comes out of the right side near the FRONT of the unit. So the cord has to snake around the very hot roaster to reach a power receptacle at the back of a kitchen counter-top. This is a dumb idea - the power cord should exit at the rear of the unit like normal well-designed counter-top appliances. 2. The handle for lifting the lid is in the center of the lid. The first time you lift the lid when the unit is at operating temperature, hot air and/or steam will rise up around your arm. You will only do this once, and then develop the habit of reaching around the side to the rear of the unit to pull the the lid up.
Hidden cost: The standard porcelain cookwell is difficult to clean after food has baked or boiled onto it for a long time. Plan on spending...
I have a 6 quart and a 8 quart Nesco and I still wanted something bigger for a bigger piece of meat. Well, I have to say, this will do perfectly! This is one huge roaster that can cook a small turkey or ham easily for my husband and I. I have cooking in it right now a big roaster chicken and it fits in well. I tried my 8 quart and the bird would not fit in. The reason for only four stars is what someone else stated and that is the handle on this. It is the worse design I have seen. To lift it with your hand in front and raise the lid to the back, you can get hot steam all over your wrist. I am raising it with my arm at the side which is awkward but at least I am not getting a hot wrist. Nesco needs to re design this handle on this lid. It still lifts off like the other styles and you avoid this steam completely, but then there is no purpose for the hinged feature. Then with lifting it off, the handle design is still awkward. The 12qt. Nesco Roaster Oven works well if used properly. The first turkey in this roaster was dry and overdone on the surface and still firm on the bone internally. The bird was not done evenly. A call to Nesco and review of the experience of other's makes it clear that the best way to use this roaster is to use a conventional heat setting without the Convection unit turned on for the major part of the cooking. When the bird is just about done; turn the convection fan on to brown and crisp the outside. The bird will simply not be done evenly if you use the convection fan for the entire cooking time. Please consider this a very nice sized normal roaster oven with the extra feature of the convection fan to brown and crisp. You will be happy if you use the roaster in this manner.
