Â The blade on the this slicing knife measures 7 inches and has an overall length of 11-3/8 inches. Â The blade is made from surgical grade, T420 high carbon stainless steel and hand sharpened creating a razor sharp edge. Â The hollow ground blade ensures a precision concave surface for maximum edge retention. Â The handle on the meat slicer is made from permanently cast silver brushed aluminum with a satin finish.
