The Bay Bolete mushrooms is one of the most popular forest mushrooms used in Polish cuisine, in addition to the noble porcini mushroom. Dried mushrooms are often used as an addition to dishes such as baking or bigos, as well as in stuffing, and are served as pickled mushrooms.
Polish dried mushrooms should soak for at least 30 minutes in water. When ready to use, squeeze them dry into the bowl and reserve the rich liquid to flavor your recipe. Remember to pour off the liquid carefully, leaving behind any grit at the bottom of the bowl. When cooking, just 3 ounces of dried mushrooms will equal about 1 pound of fresh mushrooms.
These dried wild forest mushrooms, or Podgrzybek Brunatny, are a distinct Boletus mushroom with a unique earthy taste and flavor. During the winter and at other times when fresh mushrooms aren't available, these dried jewels of the forest are made into soups and sauces. The flavour has been described as nutty and slightly meaty, with a smooth, creamy texture, and a distinctive aroma reminiscent of sourdough. They can be sautéed with butter, ground into pasta, used in soups and many other dishes.
