To make it easier to remove these two outer hulls, the oats are cleaned and briefly toasted using dry heat. This toasting also stabilizes the grain and prevents it from becoming rancid by deactivating lipase (a bitter-tasting enzyme). What remains is a whole grain groat, containing the fiber-rich bran, nutritious germ, and the endosperm, which comprises the bulk of the grain.
