I had a 15 year old paring knife that was pretty dull and my everyday santaku chef knife that had a bunch of burrs in the edge. I spent about 30 minutes on each knife respectively sharpening with the THREE GUYS 1000/3000 grit stone. Now the knives are so sharp that it easily slices through stuff in one cut. Now I want to get a 6000/8000 stone to see if I can get them to shave hair, LoL!
Finally I have sharp knives! I've tried several knife sharpening machines that have multiple spinning stones that basically grind up the knife blade, this method doesn't leave you with a sharp blade. This double sided wet stone is the way to go for a sharp knife. Go on you tube to learn how Japanese chefs sharpen their knives using a wet stone.
