This is a gadget that I've found handy for making faux pasta. I've used zucchini (though you DO have to be careful in choosing the right sized vegetable at the market) and also summer squash. I've been watching my carb consumption and a bed of shredded veggies is the perfect alternative to use under my pasta sauce.
I clean mine with a veggie brush that I always have in my kitchen. I must admit that there is always about an inch of the veggie left over but I just eat it out of hand. No big deal. I often have veggie residuals when I'm doing prep with any gadget.
As a hint to make the veggies more "pasta like" I shred mine onto a paper towel on a microwave safe plate. I then nuke it for about a minute. The veggies soften and the paper towel soaks up the excess moisture. For me, the spiral cutter serves it's purpose.
It works well for zucchini, but won't work for sweet potatos. You need a sturdier contraption for firmer vegetables.
Its a great kitchen gagdet to have. It does exactly what its suppose to. The only problem is cleaning it. The vegetables will get stuck in the blades. Usually I use a toothbrush to get into those small spaces.
