Feta is a fresh cheese whose curd is preserved in a salt brine, which gives it a characteristic flavor and a specific texture. Originally created in Romania, Feta is now best known as a Greek cheese. However, this staple is made all around the circumference of the Mediterranean, including in southern France. Valbreso Feta is made from sheep's milk that is left over from the production of Roquefort, the famous French blue cheese. While typically eaten as a table cheese around the Mediterranean, in the USA it is most often added to mixed salads, and best appreciated in the summer.

The first time I ate this cheese was at a Detroit Greektown Place called Santorini's. It came perched on top of my Greek salad. From the first bite, I was hooked. As far as I am concerned, I will never go back to the garbage in the stores that claim to be Feta cheese. Valbraso has this creamy texture that is so luscious. It is mild and delicate and not salty like the average Feta cheese. It melts in your mouth. I have never tasted such a fine feta cheese anywhere, and I have been trying to find others that are comparable. There are none. Now that I have found where I can purchase Valbraso, I'm going to enjoy it a lot more often than just at Santorini's for a special occassion.
I am really, really picky about Feta cheese and this tastes as good as if I went to buy it at (I believe) an Albanian market. Excellent cheese, but a little pricey. If it wasn't for the distance, I would get the cheese from the Albanian market. Oh, by the way... I did not find this cheese very salty, which is a plus.
