XL Pack, sufficient for 6 Gallons. Ferments crisp and dry. Low foaming, excellent barrel fermentation, good flocculating characteristics. Very clean (neutral) flavor contribution. Alcohol tolerance 17%, Ferment at 55-75 deg. F. Formerly called Pasteur Champagne yeast. This strain is used in many white wine fermentations and also some red wines. Also used for secondary fermentation of barley wine. Ferments crisp and dry, ideal for base wines in champagne making. Low foaming, excellent barrel fermentation, good flocculating characteristics.
