This Banneton Basket is a great way to kick you bread baking up to the next level. This is made from a single coiled reed of Rattan. One downside is that if you have never used one of these before, it could be easily misused. It's not like a normal bowl where you just toss things into, there is a lot of preparation you need to make sure to get the best results and that your bowl will last a long time. You can find instructions from pretty much any cooking instruction/recipe site.
Before use, make sure you season the bowl. Which you can learn from your recipe on how exactly you want to season it, and with what. Once you have made your bread dough, place in the Bowl to rise, with or without a towel depends on what you are going for. One of the biggest differences in using a banneton is the crust texture, you get a lot firmer and crispy crust on most breads which is great because the inside stays nice and fluffy.

This is one of those things that I didn't even know existed, and now I will use all the time, and probably get others in different shapes. For its first use, I floured the inside liberally before putting the dough in, and it rose perfectly, and came out of the basket very easily onto my floured wooden pizza peel, and then onto the baking sheet in the oven. It held its shape nicely and baked beautifully. For tips, remember to put the shaped dough into the basket upside down, since it ends up inverted onto the baking surface, and it does help to slash the top to prevent large holes under the top crust, and to allow for any expansion.
I consider myself to be an above average home baker but not a pro by any means. I've wanted one of these proofing baskets for quite some time to add some character to my artisan loafs. For starters the bowl arrived with no tag, instructions, etc. I have done a lot of reading on baking but if you haven't you must follow some important steps with these. First, they must be seasoned. You can do this by making a thin paste with equal parts corn starch and water. About a tablespoon of each. Brush this all over the inside of the bowl. Once it's dry you're ready to use.
