Naturally ripened ume fruits of highest quality from selected contract farmers are pickled in salt and dried under the sun for a few days before maturing for three years to develop a very balanced flavor. Connoisseurs appreciate three years matured umeboshi because of their intense flavor albeit still being juicy.
