The book provides interesting concepts. I like the fact that it begins by defining and explaining the concept of Fermentation and why fermented foods should be eaten. I learned that how traditional fermented foods can aid in digestion through the maintenance of acid balance within the stomach. I have a friend who is a diabetic and I am excited to share this information to him because fermented foods can also improve the functionality of his pancreas. To support the concept, the book provides a wide array of recipes for fermented vegetables. This is indeed a new information and I know that a lot of people still know nothing about this. The author did great in presenting the information thoroughly. And while there are a lot of recommended recipes, I did not find it hard to follow the instructions. To me this book should receive five stars and I highly recommend it to anyone.
The book begins by explaining what Fermentation is why should we eat
fermented foods. It is basically the process of converting sugar into alcohols
and carbon dioxide with the aid of helpful microbes like yeast and bacteria.
The book explains how traditional fermented foods can help your digestion
by maintaining acid balance in your stomach and how the diabetics benefit from
these as they improve the functioning of pancreas. The rest of the book contains
some excellent recipes for fermented vegetables.
This is a timely book full of wonderful and healthy recipes!
